Cherry and pistachio tart

1. Wash, pit and remove the stalks of 500 g cherries. Finely chop 120g of unsalted pistachios using a knife or food processor.

2. Preheat the oven to 210°C (th. 7). Roll out the dough in a tart pan. Prick with a fork, then pour 2/3 of the chopped pistachios. Arrange the cherries on top, sprinkle with butter and the rest of chopped pistachios. Sprinkle with 40 g of crystal sugar and bake for 20 to 30 minutes.

3. When the tart is golden brown, remove from the oven and let cool before serving.
