Ingredients
1. Cut the chorizo. Brush the salmon fillets with oil, salt and pepper. Then cover them with chorizo slices, overlapping. Sprinkle with Espelette pepper. Preheat the oven to 210°C (th. 7).
2. Pour 1 tablespoon of oil in a baking dish. Place the salmon fillets, and cover with aluminum foil.
3. Bake for 15 minutes, remove the foil and continue cooking for 5 minutes. Serve immediately with grilled eggplant slices.
