1. Work the butter with a fork in a bowl. Mix the curry, turmeric, ginger and crushed coriander seeds. Add the butter by mixing thoroughly. Season with salt. Preheat the oven to 210°C (th. 7).

2. Place the salmon fillets in a baking dish. Sprinkle the white wine. Spread spiced butter on the fish. Sprinkle with pink peppercorns.

3. Bake for about 20 minutes, depending on the oven and the thickness of the fillets.

4. Take off of the oven and remove the salmon. Pour the cooking juices into a saucepan. Add the liquid honey and sherry vinegar. Reduce over high heat.

5. Divide the salmon fillets on the plates. Sprinkle the sauce and chopped coriander.
