1. Preheat the oven to 150°C (th. 5).

2. Peel and wash the potatoes and cut into piecesSteam for 20 minutes. Wash and cut leeks into sectionsSteam for 10 minutes.

3.  Cut the salmon fillets into thick slices. Arrange a potato layer in the bottom of a baking dish. Cover with a layer of fish, cream leeks. Salt and pepper. Repeat the process with the remaining ingredients. Scatter the chorizo slices , pour the milk and sprinkle with bread crumbs.

4. Bake for 40 minutes. Remove the parmentier from the oven and serve immediately.
