Salmon blinis

Blinis with salmon will delight your guests for a delicious appetizer.

  Ingredients

1. In a glass, dissolve the yeast and sugar with 2 tablespoons of water. Cover and place in a pot with warm water. Leave to sit for 20 minutes.

2. Warm the milk. Separate the whites from the yolks. In a bowl, mix the two flours, 2 pinches of salt, the yolks and the yeast. Add the milk and mix well. Leave to rise for 2 hours at room temperature.

3. Melt 25 g butter and beat the egg white until they turn white. Incorporate it gently into the dough. In a small pan with a small knob of butter, pour a small circle of dough. Leave to cook for 2 minutes then turn the blini and cook for 1 minute.  Repeat for the rest of the batter. Keep warm and set aside.

4. Wash and dry the cucumber and the chives. Chop the cucumber and loosen the chives. Cut the salmon in two. In 6 plates, divide the blinis and cover with cucumber slices and salt lightly.  Place the salmon halves on top and sprinkle the chives. Add the creme fraiche and pepper. Serve.
