Raw marinated sardines in herbs

1. Ask your fishmonger to wash and cut the heads off the sardines. Remove the bones, but don’t separate the two fillets. Squeeze the lemon. Peel and chop the onions.

2. Place the sardines in a shallow dish with the skin facing the top. Salt and sprinkle the chopped onions. Sprinkle the lemon juice and olive oil. Place in the fridge covered with cling film for 30 minutes.

3. During this time, wash and dry the herbs. Drain the sardines and spread them on a work station. Garnish with a few sprigs of each herb and roll them onto themselves. Divide on plates, sprinkle with the marinade and serve.
