Here’s the perfect dish for Christmas! These oysters served on a bed of sea salt will amaze you!

1. Prepare the jelly: heat the shallot vinegar over low heat in a small saucepan. Add the agar-agar and stir until completely dissolved. Boil for 1 minute. Pour the mixture into a plastic box.

2. Preheat the oven to th. 6/7 200°C. Mix all the spices in a coffee grinder or chop, and mix them with the coarse sea salt. Spread the fragrant salt in a baking dish, then bake for 15 minutes.

3. Meanwhile, open the oysters, setting aside their juices. Place 1 teaspoon of the shallot jelly on each, then sprinkle with lemon zest. Serve the oysters on a bed of warm and fragrant salt.
