Spiced apple turnovers

1. In a saucepan, melt the salted butter, and add the chopped apples, honey, citrus juice and raisins.

2. Bake for 10 minutes, stirring regularly. Mash the apples, using a fork.

3. Preheat the oven to th. 6-180°C. Roll out the dough. Using a cookie cutter or a large glass, cut discs.

4. In a bowl, whisk with a fork, egg yolks, icing sugar and milk. Brush the edges of the dough up to 5 mm inward.

5. Place in the middle the apple compote. Fold the dough and seal using your fingertips. Brush each apple turnover with the egg-milk mixture .

6. Put the apple turnovers on a baking sheet lined with parchment paper. Bake for 10 minutes and let cool on a wire rack before serving.
