Monkfish with beans and cilantro cocotte
We suggest you a monkfish cocotte recipe accompanied by coriander beans
1. The day before, soak 300 g fresh white beans for 12 hours in water.
2. On the day itself, mix 1 Bulgarian yogurt with 1 teaspoon of Madras curry. Place the 500 g of monkfish into the marinade and place in the fridge.
3. Peel 6 shallots and 3 garlic cloves. In a pot, cut the shallots in 2 and fry with 2 tablespoons of oil. Incorporate the garlic and the beans. Add water to cover, 2 bay leaves and cook with the lid on for 1 hour.
4. Pour the monkfish and the marinade into the pot. Cook uncovered for 10 minutes on low heat. Salt and sprinkle 1 pinch of Espelette pepper. Serve hot and sprinkle with chopped cilantro.
Our cooking tip: Never salt the white beans before cooking because the salt will harden the skin and impede the cooking. To obtain a smooth consistency, salt them at the end.
