1. Preheat the oven to th. 6/7 200°C. Buttered 6 soufflé moulds.

2. Melt 60 g of butter in a saucepan, add the flour, stirring for 2 minutes with a wooden spoon, pour the milk little by little, stirring constantly. Cook for 6 to 7 minutes until the mixture thickens. Season with nutmeg and pepper.

3. Crumble the blue cheese and add it to the previous mixture, keep stirring. Remove from the heat and let cool. Separate the egg whites from the yolks, whip the egg whites with 1 pinch of salt. Mix the yolks with the béchamel, then gently add the whites, lifting upwards.

4. Divide the batter into the moulds, sprinkle with poppy seeds and bake for 20 minutes without opening the oven door. Serve immediately.
