Pineapple and coconut beignets
For a snack or a birthday party, prepare some pineapple and coconut beignets with our easy recipe.
1. Sift flour into a bowl. Add granulated sugar. Make a hole in the center. Pour in the egg and oil. Stir with a spatula, then pour the milk gradually until the batter is smooth and thick. Cover with plastic wrap and place in the fridge for 2 hours
2. In a deep fryer, heat oil. Put the grated coconut in a plate.
3. Drain the pineapple slices. Dip them in the batter, so they are completely coated, then toss in shredded coconut.
4. Dip them in pairs in hot frying oil, turning constantly using two forks until beignets are golden brown.
5. Drain on paper towels and serve immediately.

Just drizzle the lemon juice on the pineapple slices to prevent them from turning brown.
