Smoked fish and lentil salad
For an easy recipe with a gourmet touch, try this smoked fish lentil salad for your lunch.
1. Peel the onions and prick them with the clove. Peel and cut in half the carrot. In a saucepan, place the lentils, onion, carrot and the bouquet garni. Add salt and pepper. Cover with water, bring to a boil and then leave to cook over low heat for 30 minutes.
2. During this time, cut the haddock fish fillet into small slices of about ½ cm. Season with pepper lightly and sprinkle with lemon huice. Peel and chop the shallots.
3. In a bowl, combine the vinegar with the sunflower and hazelnut oil, and season. Add the drained lentils and the shallots. Mix well.
4. Wash, dry and loosen the chervil. In 6 bowls, divide the salad and the fish. Garnish with herbs. Season with ground black pepper.
