Raw fennel salad

Revel in a fennel salad with an incredible sweet anise-like flavour combined with juicy oranges and smooth avocado.

  Ingredients

1. Cut the fennels in two. Take away the outer leaves if not white and crisp. Wash, then cut in fine slices, using a mandoline, 1 mm wide.

2. Peel the avocado, remove the pit, then cut in slices – add some lemon juice to prevent oxydation.

3. Cut top and bottom of the orange and remove all the skin with a sharp knife. Cut out the segments in between the white membrane.

4. In a bowl (or on individual plates), combine avocado slices, shaved fennel and wild rocket salad, add orange segments, sprinkle with pumpkin and pomegranate seeds.

5. Prepare the dressing : in a small bowl, combine the orange and lime juice, salt and pepper. Add olive oil slowly, while stirring with a whisk or fork. Pour dressing over the salad and serve immediately.
