Potato salad with spinach and radish

1. Wash the vegetables. Cook the potatoes for 20 minutes in salted water. Drain and let cool.

2. Meanwhile, drain the spinach and trim off the radish leaves and roots. Rinse, dry and chop the chives. Peel and chop the shallot finely. Combine the vinegar, shallot, oil, salt and pepper.

3. Peel the potatoes and cut into thick slices. Cut the radishes into thin slices. In a bowl, put all the vegetables with spinach, drizzle with vinaigrette and mix well. Divide between 6 plates and sprinkle with chives.
