Pear salad with lamb’s lettuce and goat cheese

A sweet and sour salad recipe for starter. A wonderful marriage between fruits and vegetables.

1. Wash and dry the spinach and lamb’s lettuce. Cut the pears into quarters, remove the seeds and cut into strips. Divide onto 4 plates, sprinkle lemon juice at the end to prevent oxidation. Add the spinach leaves.

2.  Make an emulsion in a bowl with the oils, vinegar, salt and pepper. Preheat the oven on grill.

3. Cut the cheese in 8  strips. Place 2 pieces on each slice of bread. Bake for 3 minutes.

4. Sprinkle with vinaigrette and raisins on top. Serve immediately.
