Fruit salad with watermelon sorbet

1. Prepare the sorbet: cut the watermelon into morsels and blend.

2. In a saucepan, pour the sugar and add 20 cl of water and bring to a boil. Add the glucose and mix until it dissolves completely. Remove from heat and leave to cool. Add the lemon juice and the watermelon puree. Mix well.

3. Pour in into a sorbet machine and start the process. When the sorbet is done, pour into a container. Cover and place in the freezer for no less than 2 hours.

4. Cut the figs into quarters, the nectarines into strips and the strawberries in half or quarters. Wash and remove the seeds from the grapes. Mix all the fruits in a salad bowl.

5. Combine the sugar, rum and 3 tablespoons of water. Pour this mixture in the fruit salad, wrap with cling film and store in the fridge. Remove the sorbet from the freezer 10 minutes before serving.

6. Divide the fruit salad into bowls and form quenelles with the sorbet with the help of 2 tablespoons. Add the sorbet to the fruit bowls. Decorate with the basil leaves. Serve immediately.
