A quick and easy salad to make with cucumber, shrimps and avocados! Delicious and affordable.

  Ingredients

1. Shell the prawns and leave the tails. Chop the basil. Squeeze the lemon. Peel and slice the cucumber.

2. Cut the avocado flesh into cubes. Place in a bowl and sprinkle with lemon juice.

3. Add in the cucumbers to the bowl with the prawns and basil, sprinkle olive oil and season with salt and freshly ground pepper. Mix gently and set aside in the fridge.

4. Before serving divide the salad into bowls. Serve cold.
