1. Cut the rabbit into cubes, place them in a large shallow dish. Chop the basil. In a bowl, combine the basil with mustard, lemon juice and oil. Add salt and pepper. Coat the rabbit meat with the sauce and mix. Wrap in cling film and leave to marinate for 6 hours in the fridge.

2. Prepare the sauce: wash the tomatoes and immerse them for 20 seconds in boiling water. Drain, peel and cut all of it into small pieces. Rinse, dry and chop the herbs. Remove the garlic skin and squeeze. Place all of it in a big bowl with the juice of half a lemon and oil.

3. Prepare the barbecue. Skewer the meat cubes. Cook for 10 minutes, turning frequently. Serve with the sauce.
