Molten chocolate cake with cherries
We propose you a molten chocolate with cherries. To be enjoyed for dessert or for tea-time..
1. The day before: make a caramel with 20 g of sugar and 1 tablespoon of water, then deglaze with 50 g of cherry cream . Add 100 g of fresh cherries, pitted and cook over low heat for 10 minutes. Mix a bit and add 1/2 lemon juice. Pour into an ice cube tray and freeze overnight.
2. Melt 100 g dark chocolate into pieces with 90 g of butter in the microwave and smooth.
3. Preheat the oven to 180°C (th. 6). In a bowl, beat 3 whole eggs with 80 g sugar until mixture is foamy. Then add the chocolate and 40 g of flour while beating.
4. Butter 6 ramekins and pour into each bottom ½ cm chocolate batter and bake for 3 minutes. Allow to cool, add a little paste, insert one cherry ice cube, and cover up to 5 mm from the edge. Bake for 10 minutes.
5. Unmold the molten cakes in 6 plates. Over high heat, reduce a little cherry cream and pour over the cake.
