Chocolate mousse and kiwi

1. Melt the chocolate in a water bath over low heat, stirring, until smooth. Pour into a bowl.

2. Separate the egg yolks from the whites. Add the yolks, one by one, into the melted chocolate, mixing well. Beat the egg whites with a pinch of salt.

3. When they are firm, add them delicately to the chocolate mixture, lifting the mixture gently to not break the whites. Divide the mousse into 6 glasses. Cool and refrigerate for at least 3 hours.

4. Just before serving, peel the kiwis and cut into very small pieces. Garnish the chocolate mousse with the diced kiwis. Serve immediately.
