Coconut fish bites
For appetizer or as a starter, here is a spicy fried fish and coconut recipe. Enjoy!
1. Boil the fish stock in a pot. Add the whiting fillets in the stock and poach them for 10 minutes.
2. Meanwhile, wash, remove seeds and chop the red chili pepper. Wash, dry, thin out and chop coriander. Remove the crust of the bread slices. Squeeze the lemon juice.
3. Drain the fillets and place in a blender. Add the slices of bread, coconut, whole eggs, coriander, chili and lemon juice. Blend until smooth. Pour the mixture into a bowl and refrigerate for 30 minutes.
4. Shape into small balls and roll lightly in flour.
5. Heat the frying oil. Dip the fish balls by two or three, and fry until golden. Drain on paper towels. Salt and pepper and serve immediately with a sweet and sour sauce.
