Coconut fish bites

Enjoy these crisp coconut fish bites for an excellent appetizer or starter.

1. Boil the fish stock in a pot. Immerse the white fish in the stock and poach for 10 minutes.

2.During this time, wash the chilli pepper, remove the seeds and chop.  Wash, dry and loosen the cilantro. Remove the crust from the pieces of white bread. Squeeze the lemon juice.

3. Drain the fish fillets and place them in a blender. Add the bread, the coconut, the eggs, the cilantro, the chilli pepper and the lemon juice. Blend until you obtain a smooth paste. Pour the mixture in a bowl and set aside for 30 minutes in the fridge.

4. Make little bowls from the mixture and roll them lightly in flour.

5. Heat the frying oil. Immerse the fish balls by two or three and fry until it is golden. Drain on a kitchen towel. Season with salt and pepper and serve immediately with sweet and sour sauce.
