Sweet and sour flammekueche

Revisit the recipe for flammekueche. Add vanilla, anise, pears and cinnamon. An excellent sweet and sour mix.

1. In a saucepan, boil 75 cl of red wine with 120  of granulated sugar, 1 star anise 1 cinnamon stick and 1 vanilla pod and beans scraped previously.

2. Wash and peel 6 small pears. Ad in the pan and leave to simmer for about 1 hour, turning regularly. Cut them into thin slices.

3. Bake the flammekueche, according to the time indicated on the package. Cut into small pieces. Arrange on each piece a slice of spicy pear wine.

Our baking tip: Serve with a mixed green salad dressed with olive oil and raspberry vinegar.
