1. Pour the wine into a dish. Add the pieces of chicken, 1 chopped onion and celery stalks, cut into sections. Marinate 1 hour.

2. Drain the chicken and roll them in flour. Let them brown in a pan with hot oil then add 1 chopped onion and garlic. Transfer everything in a pot. Pepper and salt lightly. Pour the marinade, stock and bring to a boil. Reduce the heat and leave to simmer, covered, 1 hour.

3. Fry the sliced mushrooms in a pan and then add them to the chicken with the bacon. Pour a few drops of tabasco and simmer for 1 hour, half covered. At the end of the cooking, mix the flour with a little water in a cup, add in, allow to the sauce thicken. Serve with the mashed potatoes.
