1. Place flour, salt, baking yeast and sugar in a bowl. Combine together and make a hole in the center. Beat eggs with milk and pour into the mixture.

2. Whisk gently, gradually incorporate the flour mixture. Melt the butter and let it cool. Pour it gently into the batter, stirring constantly. The dough should be smooth and slightly thick.

3. Heat a nonstick pan and add oil. Drop batter by teaspoons. Let the paste spread slightly in a circle. Cook for 2 minutes, then flip the pancakes. Continue cooking 2 minutes.

4. Remove the mini pancakes and keep them warm in a cloth. Repeat with more oil and remaining batter.

5. Serve hot pancakes sprinkled with icing sugar and red fruit jam.

Our tip : You can replace the red fruit jam with another of your choice. For the sweet tooth, go for the salted butter caramel, maple syrup, chocolate sauce or dulce de leche.
