Mustard burgers

1. Preheat oven to 200°C (th. 6/7). Season 500 g of ground beef with 4 pinches of fine salt and shape beef patties by hands or using a cookie cutter.
2. Wash and chop 1 iceberg lettuce, pour 2 teaspoons of mustard and set aside.
3. Cut 200 g of Cantal cheese into thin slices, using a peeler. Peel 1 red onion and cut into thin slices. Cook over low heat for 10 minutes in a saucepan with 20 cl of red wine vinegar.
4. In a hot pan, cook the beef patties on each side with 1 dash of olive oil, up to the desired doneness. Place the Cantal cheese slice on the warm meat.
5. Bake 4 burger buns for 2 minutes. Assemble the burger: first the bun, seasoned salad, beef patty, Cantal cheese, and red onion. Top it with bun, brush it with 2 teaspoons of mustard.
