Beef rib with red wine sauce

The fragrant red wine sauce enhances the flavours of the beef. A true and simple gourmet dish.

1. Prepare the red wine sauce: peel and chop the onion.

2. Peel, wash and cut the carrots into small cubes.

3. Pour the wine into a saucepan, add the onion, carrot, thyme, bay leaf and sugar. Bring to a boil and let the liquid evaporate by half. Filter through a fine sieve.

4.  At the last moment, reheat over medium heat and stir in the very cold salted butter cut into pieces. Season.

5. Preheat the oven to th. 7-210°C. Leave the rib at room temperature 1 hour before cooking. Put it on the oven rack and bake for about 10 minutes on each side.

6. Cut the beef ribs into 4 pieces. Serve with parsnip French fries.
