Pineapple and ham amuse-bouche

						Ingredients					
				
				
			1. Tim off the leaves and the base of the pineapple. Peel and remove all the eyes with a small sharp knife. Cut into slices. Wash and dry the sprigs of chervil.
2. Cut the ham slices in two along its lengths.
3. Heat a pan with no fat added and sear the pineapples for 3 minutes on each side. Add pepper.
4. Divide 2 slices of pineapples on 6 plates. Place 1 slice of ham on top. Decorate with 1 sprig of chervil. Serve immediately.
