Cauliflower and gorgozola soufflé
For a healthy meal, here is a cauliflower and gorgonzola soufflé recipe . Easy and quick to make.
1. Pare the cauliflower, separate the florets and rinse thoroughly. Steam the cauliflower for 20 minutes.
2. Cut the gorgonzola into small cubes. Purée the cauliflower in the food processor.
3. Separate the eggs. Incorporate the yolks into the purée, add the gorgonzola cubes and mash it up. Slightly salt and pepper.
4. Beat the whites with a pinch of salt. Gently fold into the puree, while stirring slowly.
5. Preheat the oven at 210°C. Grease 6 bowls with butter and divide the cauliflower purée. Bake for 20 minutes until golden brown.
6. Wash, dry and chop the chives. Sprinkle over the soufflés and serve with slices of prosciutto ham.
