Gorgonzola and pear bagel

Discover a new bagel recipe, this time with pears and gorgonzola. A very fast delight to prepare.

1. Peel and chop the shallots. Peel pears and cut in half. Scoop out the core and remove the seeds. Dice half of the pear and cut the other half into matchsticks. Sprinkle with lemon juice.

2. In a pan heat olive oil and cook the chopped shallot, stirring with a wooden spoon. Add the diced pear and cook for 10 minutes stirring. Salt and pepper. Remove from heat and let cool.

3. Crumble gorgonzola. Add the diced pear and mix. Sprinkle with pine nuts.

4. Cut bagels in half and toast. Spread half of bagel with the pear and cheese mixture and top with pear matchsticks. Cover with second half. Serve immediately.
