Polenta fries

Here is a recipe to make polenta fries. These delicacies can also be served in appetizer or starter.

1. Cut the olives into small dice. Bring 1, 25 l of salted water to a boil. Gradually whisk in the polenta. Cook for 5 minutes, stirring constantly. Add pepper and remove from heat as soon as the polenta pulls away from the pan. Stir in 50 g of butter in pieces, diced olives and mix.

2. Grease a baking tray and pour the hot polenta. Spread so as to obtain a layer 2 cm in thickness. Let cool for 1 hour.

3. Cut strips of 2 cm wide and 5 cm long. Preheat the oven on grill position. Melt the remaining butter and brush the  fries. Bake for 3-5 minutes. Serve immediately.

Our tip: In this recipe, we recommend using black and green olives. This will give two different tastes, bitterness of black olives and fruitiness of green olives.
