Green curry salmon with cashew nuts

For a family dinner, here is a recipe to revel in green curry salmon fillets with cashew nuts. A tasty dish easy to make.

  Ingredients

1.  Cut 4 salmon fillets of 160 g each horizontally in half, take the skin off.

2. Spread inside 10 g of green curry paste. Salt and pepper.

3. Chop coarsely 50 g cashew nuts. Peel and chop 1 onion. Sweat onion for 5 minutes in olive oil over low heat. Add cashews and 40 g of green curry. Let brown for 2 minutes and then add 20 cl of coconut milk and 5 cl of water. Salt and pepper, cook for 10 minutes over medium heat, stirring regularly.

4. At the end of the cooking, add 2 chopped coriander sprigs, and leave sauce over low flame without boiling.

5. Over medium heat, in a pan with olive oil, cook the salmon fillets for 4-5 minutes on each side. Serve with sauce, and complement with fried rice with almonds.
