  Ingredients

1. Prepare a sweet and sour sauce by mixing 100 g of artisanal ketchup (or home made), 10 g of chopped ginger and 5 cl of soy sauce.

2. Incorporate 1 egg white, 140 g of flour, 20 cl of cold sparkling water and 1 teaspoon of sesame seeds: do not over stir, the batter should be liquid but remain lumpy

3. Wash 1 punnet of baby plum tomatoes. Dip them in the tempura batter and fry at 180 °C.
