Let’s start with the ingredients of the classic recipe and easy to succeed! Here is what you need:

  •  25 cl sunflower oil
    • 1 egg yolk
    • 1 teaspoon mustard
  • 1 dash of wine vinegar or lemon juice
  • Salt and pepper

1. First, mix the mustard, egg yolk, salt and pepper. Slowly stir in the oil while whisking with an electric mixer on medium speed (which is still the best way to succeed). You should see an emulsion.

2. Gradually add the remaining oil, while still beating (still with your mixer on medium speed).

3. Finally stir in the vinegar or lemon juice and adjust the seasoning.

If you are wondering how to store the mayonnaise, we advise you to cover with cling film and lace in the fridge. You can keep it for 1 or 2 days.
