‘I leave the mustard grains marinate for about an hour until complete absorption of vinegar. This makes an excellent mustard.

Christopher P. shared his recent discoveries:

‘I discovered that by carefully cutting the mustard grains, It gives more taste. You can also add items such as fennel during the  maceration. It will give character.’

A very interesting technique!

Melissa P.gives her tip:

‘If your mustard complements a meat, brown a diced shallot in 10 to 15 g of butter and add them to the mixture. It’s really delicious!
