What is Cognac?

Cognac is the result of a process so complex that one almost forgets its origins: a blend of eaux-de-vie produced from wines, and more precisely from one particular grape – Ugni Blanc. It has its roots in the vineyards of Charente – a region covering 75.000 hectares in the West of France – and nowhere else. Cognacs are classified according to their age: the youngest element of the blend shall be at least four-and-a-half year old for a VSOP (Very Special Old Pale) while we ask an XO (eXtra-Old) to be at least six-and-a-half year old.

Why is Martell Cordon Bleu 300 Year Anniversary Edition the perfect choice for the Foie Gras Lollipops?

Martell is one of the oldest cognac houses in the world. To celebrate its 300 years anniversary, the brand has developed a very limited edition of its signature cognac Martell Cordon Bleu. The blend uses more than 100 eaux-de-vie, which have been resting in a cask made with 300 year-old oak. Martell Cordon Bleu 300 Year is a cognac with a deep aromatic richness. It reveals aromas of crystallised fruits, Mocha Coffee, rich spices and a nice woody flavour. The Foie Gras Lollipops partner beautifully with this unique cognac in their ability to bring out the spices’ flavours: orange tree flower, cinnamon, honey and beeswax.

What’s the best way to drink cognac?

It is best to enjoy Martell Cordon Bleu at room temperature – either in a tulip glass or in a balloon glass, both having very wide bells (for swirling) that narrows to intensify the bouquet.
