Health benefits of eggplant

Mediterranean cuisine lovers, eggplant has many health benefits, low in calories and satiating, it is certainly the darling of the summer!

Simply grilled, the eggplant taste great. Enjoy it also as an accompaniment to barbecue or tempura. You can also make a delicious Italian parmigiana with tomato sauce and parmesan. Or whip up a caviar eggplant for appetizer. A fried vegetables such as ratatouille is also a very good way to cook this vegetable. Eggplants can also be steamed. They complement very well meat or fish. And let’s not forget the popular Greek dish, moussaka!

Healthy tip:

The eggplant skin contains many antioxidants and also contains fiber. Very low in calories (only 18 kcal per 100 g), it also has satiating virtues. It helps digestion and prevent the colon cancer.

Stuffed eggplant with goat cheese or grilled eggplant toast with goat cheese make gourmet starters. Add farlic and onions to spice up the flavours. 

How to choose:

The eggplant must be smooth, unblemished and firm. The skin should not bounce back when you lightly squeeze it. Store it in the fridge for up to one week.

To avoid bitterness, some disgorge the raw eggplant slices in salted cold water for 1 hour, then rinse and cook them.
