Steamed eggplant with mushrooms

1. Cut the veal into cubes. Wash and cut the eggplant into pieces. Place in a bowl filled with salted water and leave for 30 minutes. Pat tdry. Steam for 45 minutes.

2. Meanwhile, melt butter with 1 tablespoon of olive oil. Cook the meat. Add the peeled and chopped garlic and mushrooms. Wait until water has evaporated and pour the white wine. Salt and pepper. Continue cooking for 30 minutes over low heat.

3. Add eggplants and cook for 15 minutes. Pour tomato paste and cook for 5 minutes over high heat. Sprinkle with chopped chives. Stir and serve.
