1. Wash the zucchinis and bell peppers. Cut the zucchinis into fine sticks and remove the seeds of the bell peppers, then cut into small cubes.

2. Heat the oil in a large nonstick pan, add the bell peppers. Cover and cook for 10 minutes over low heat, stirring from time to time. Incorporate the zucchinis and then cook for 10 minutes with the lid on.

3. Beat the eggs, add salt and pepper. Pour onto the vegetables and cook over high heat until the edges are firm. Flip it and cook for 4 more minutes. Once cooked on both sides, place it in a dish with a side of green salad.

Our cooking tips: You can add potatoes to this to make a Spanish tortilla. When you beat the eggs, add a teaspoon of whipping cream and beat vigorously until the eggs are fluffy for a lighter omelet. You can also add cheese like parmesan during the cooking.
