The artichoke pasta recipe is a healthy dish without compromising on flavours and satisfaction.

1. Break the sprigs of artichokes. Remove the hard leaves and cut all the extremities. Cut the artichoke in two. Squeeze the lemon over it.

2. Heat 3 tablespoons of oil in a pot. Add the artichokes, salt, pepper and water. Cook over low heat for 40 minutes. Drain and leave to cool.

3. Cook the pasta al dente in boiling salted water. Drain and run under cold water. Wash, dry and cut the celery. Wash, dry and chop half the basil leaves.

4. Place the pasta in a bowl with the artichokes, celery, raisins and pine nuts. Sprinkle with chopped basil, remaining oil, salt, pepper and mix. Decorate with basil leaves and serve.
