Eggplant caviar wraps
Here is a recipe to make wraps with eggplant caviar in no time. This is easy and delicious.
1. Prepare the eggplant caviar: preheat the oven on grill position. Place the eggplants on a baking sheet, prick with the tip of a knife, slide under the grill and cook for about 35 minutes, turning regularly, until the skin is withered and cracked.
2. Meanwhile, peel the garlic, remove the green germ and crush in a bowl. Squeeze the lemon juice, pour into the bowl and mix well.
3. Let cool the eggplants, cut them in half and spoon out the flesh. Place in a mixer bowl with the lemon juice, garlic. Add salt and pepper and blend. Pour the eggplant puree in a bowl and add a drizzle of olive oil until a smooth paste.
4. Place tortillas on work surface. Garnish with a lettuce leaf, alfalfa sprouts, and a tablespoon of eggplant caviar. Roll them enclosing the ingredients.
5. Wrap tight in cling film. Before serving, cut the tortillas in half and remove the plastic wrap. Serve chilled.
