For a healthy starter, here is a simple recipe for braised red cabbage with apple juice.

Ingredients
1. Wash the cabbage, remove the outer leaves first, then chop. Peel and slice the red onion.
2. Heat oil in a pan, add the chopped cabbage and red onion. Sprinkle with sugar, pour the vinegar and apple juice, and salt and pepper. Cook for 45 minutes over low heat.
3. Wash the chives. Divide the braised cabbage in 6 bowls. Garnish with chives. Serve warm.
