Strawberry cheesecake
To finish your meal on a sweet note, here is a recipe for a cheesecake made with strawberries. A treat that can not be refused.
1. Blend 250 g speculoos with 3 tablespoons quark cheese to obtain a sandy mixture. Spread on the base of a springform mould. Place in the fridge for 4 hours.
2. Wash and dry 250 g strawberries. In a bowl, mix p400 g of quark cheese and 200 g cottage cheese. Soften 4 gelatine sheets in 1 bowl of water. Wash and zest the lemon. Squeeze the juice and boil with the caster sugar with 10 cl water. Remove from the heat.
3. Drain the gelatine, melt into the hot syrup and leave to cool. Incorporate all of it into the previous mixture.
4. Cut strawberry slices and arrange along the sides (set some aside for decoration). Divide the mixture in the centre. Smooth with a spatula and place in the fridge for 3 hours until it sets. Serve cold and decorated with the remaining strawberries.
