Nancy macarons

Here is a traditional recipe for macarons as you can find in the city of Nancy. Serve as dessert.

1. Mix the almond powder, sifted icing sugar and vanilla sugar. Beat the egg whites until soft peaks and fold gently to the above mixture. Add the vanilla extract.

2. Preheat the convection oven to 240°C (th. 7).

3. Line the parchment paper on baking sheets, and with a pastry bag fitted with a smooth tip pipe out circles of 4 cm in diameter, staggered and well spaced from each other.

4. Lightly moisten the surface of each macaron with a brush and sprinkle with icing sugar. Slide the baking sheets in the oven, close the door and then lower the temperature to 150°C (th. 5). Bake for 15 to 20 minutes.

5. Remove from the oven, slide the parchment paper sheets on a rack and let cool.
