Lemon meringue cupcake
One of our readers, Marie-Sarah, shares with us her recipe of lemon meringue cupcakes.
1. Preheat the oven to 180°C. Mix the softened butter with the sugar until a creamy texture. Add the mascarpone, egg, and beat again.
2. Add the flour, baking powder and almond powder and whisk until a smooth batter. Finish by adding the juice and lemon zest.
3. Divide the batter into the moulds and bake for 18 minutes. Unmould the cupcakes and dig a hole to fill with the lemon curd. Increase the oven temperature to 210°C.
4. Prepare the meringue by whipping the egg whites until stiff. Add the icing sugar and whisk again. Spoon out a pastry bag.
5. Pipe the cupcakes with meringue and cook for 3-4 minutes until the meringue is coloured.
