Homemade marshmallows
For a birthday party or any celebrations, feast your kids with homemade marshmallows. Such an easy recipe.
For 2 dozen :
1. Place the gelatin leaves in cold water. In a saucepan, combine honey, granulated sugar and 9 cl water, and bring to a boil at 130°C (use a candy thermometer). Add the drained gelatin leaves.
2. In a bowl, whip the egg whites until they are foamy. Continue to whip while adding the honey mixture until it becomes lukewarm.
3. Pour the mixture in different bowls, matching your choice of colors and flavors. Scoop the mixture into a pastry bag and start piping onto rectangle baking mold, lightly oiled. Let set for an hour and unmold.
4. Cut the batter into squares with a hot knife. Sift together the icing sugar and cornstarch and dust on the marshmallows (to prevent marshmallows from sticking fingers). Cover with plastic wrap and store in the fridge.
