Frozen blackberry soufflés

Make a refreshing dessert with our easy recipe for a frozen blackberry soufflé.

1. Rinse and dry the blackberries. Pour sugar and 10 cl of water in a saucepan and bring to a boil. Cook for 7 minutes. Add the blackberries and cook for 5 minutes. Let cool.

2. Drain the blackberries and pour the juice into a saucepan. Reduce by half. Beat the egg whites until stiff. Gradually add the boiling syrup, while beating. Let cool. Mix the blackberries. Whip the cream into a chantilly. Stir into the egg whites and add mashed blackberries.

3. Line strips of parchment paper into 6 small moulds, with an edge of 5 cm in height. Tape the parchment paper or use kitchen string. Put the blackberry mixture up to the top. Place in the freezer for 3 hours.

4. Slide the frozen soufflés in the fridge for 30 minutes before serving. Then remove the paper and serve.
