Ingredients
1. Pour into a saucepan the egg yolks, cream and granulated sugar. Place the saucepan in a larger container,in which you put water to make a bain-marie. Bring to a boil.
2. Whip vigorously until thickened. Sprinkle with cinnamon and mix.
3. Pour the sugar syrup and mix again. To know if the cream is ready, draw a line on the wooden spoon with your finger. If it lasts clearly, the cream is ready.
4. Pour into ramekins and refrigerate.
