Christmas yule log cake
To celebrate the end of the year, we recommend you this recipe for a Christmas log.
1. Prepare the sponge cake. Melt the butter. Separate the egg whites from the yolks. Whisk the yolks with sugar until the mixture tuns pale. Beat the egg whites until stiff peaks with salt. Mix the flour, potato starch and almond powder. Fold half into the egg / sugar mixture, then pour the melted butter and baking powder. Stir slowly the egg whites alternately with the flour mixture / starch / almonds , lifting the batter gently.
2. Preheat the oven to th. 7/8 - 230°C. Line a buttered parchment paper on a baking sheet. Pour the batter and spread it in an even layer with a metal spatula. Bake for 10 minutes. Place a damp cloth over the cake and turn it on a work surface. Remove the parchment paper and roll the sponge cake with the cloth. Leave to cool.
3. Prepare the ganache. Bring the cream to a boil. Grate the chocolate in a bowl. Pour the hot cream, whisk until smooth. Add butter into pieces, continue beating.
4. Unroll the sponge cake. Spread half of the ganache, roll again and cover with the remaining ganache. Make zigzag on top, decorate with golden sugar pearls and dust with icing sugar. Refrigerate for at least 2 hours.
