  General informations
  Ingredients

1. Separate whites from yolks. Whisk the yolks together with sugar until the mixture turns pale and fluffy. Add the mascarpone cheese and combine well till smooth.

2. With a pinch of salt, whip the egg whites to firm peaks. With a rubber spatula, gently mix to the mascarpone mixture. Add 2 tablespoons of cocoa powder and stir. Store in the fridge.

3. Pour the orange juice in a shallow dish. Cut the lady fingers to the size of your glasses. Dip 6 biscuits only a few seconds in the orange juice. Don’t let them soak for too long so they don’t fall apart. Keep the remaining lady fingers to decorate.

4. Spread the chocolate mascarpone mixture in the bottom of the glasses. Arrange another layer of soaked lady fingers and top it with remaining chocolate mascarpone mixture. Refrigerate for 6 hours.

5. When serving, decorate with lady fingers. Dust with cocoa powder. Best served cold.
